EAT | Spanish Rice

One of my favorite things to eat in the whole world is RICE.  I love fried rice, yellow rice, sticky rice, but my favorite kind of rice is Spanish rice!  I make a quick and easy Spanish rice that tastes just like the kind from a restaurant!  Let’s get started.

What you need:

  • 3 tbsp vegetable oil
  • 1 c uncooked long grain rice
  • 1 tsp garlic salt
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 c puréed diced tomatoes
  • 2 c chicken broth (you can substitute vegetable broth for a vegan option!)

In a large skillet, heat oil over medium heat until hot.  Add rice and stir constantly until puffed and golden.

 
Sprinkle with garlic, cumin, and onion powder.  

 
Stir in puréed tomatoes and broth.  Bring to a boil.

  
Reduce heat to low, cover, and simmer for 20-25 min.

  

Fluff with a fork.
