EAT | Crockpot Pesto Chicken Pasta

Today I am sharing a recipe that is super easy to make and so flavorful and delicious. Pasta is one of my family’s favorite things to eat, and we have some variation of it two to three times a week!

This dish is made in the crockpot (well, most of it) and only takes a few minutes to assemble! Making dinner ahead of time is crucial for me, my girls have tennis practice after school and I have no time after 3:00 pm! Gotta stay one step ahead.

Here’s what you need:

  • 2 chicken breasts
  • 1 jar pesto sauce
  • Salt and pepper
  • 1/4 cup butter, sliced
  • juice of 1/2 of a lemon
  • 1/4 cup heavy cream
  • Parmesan cheese
  • 1/2 lb rotini pasta

Place your chicken in the crockpot.

Cover the chicken with your pesto. A little jar like this one is just fine.

Add salt and pepper to taste, and then place your butter slices on top.

Add your lemon juice to the top.

Cover and let cook on low for 3 hours.

Here’s what it looks like after 3 hours.

Take your chicken out and shred it up. Put it back in the crockpot for another hour.

Add your of heavy cream and some parm to the chicken and stir.

Cook your pasta, and add to crockpot. Mix together and serve with more cheese on top!
