EAT | One Pan Meal : Cheesy Taco Pasta

Do you love pasta?  What about tacos?  I’ve combined the two with my Cheesy Taco Pasta!  This is a quick and easy dish that the whole family loves and the best part is… it requires only ONE PAN. Hooray for easy clean up!

Let’s get started.

You will need:

  • 1 lb ground beef
  • 1/2 c onion (finely chopped)
  • 2 cloves garlic (finely chopped)
  • 2 cups water
  • 2 cups salsa
  • 1 cup frozen corn
  • 2 tbsp taco seasoning
  • 2 cups macaroni
  • 2 cups cheese

Brown the ground beef, add chopped onion and garlic, and stir.  Add in one cup of water, salsa, corn, and taco seasoning.   

Stir and add pasta.  I used elbow macaroni, but you could use any pasta you like!

  

Bring to a boil, and then simmer (uncovered) for about 10 minutes.

  

Add the remaining cup of water, cover, and simmer for another 10 minutes, or until the noodles are soft.

  

Top with your cheese – I used cheddar but Colby jack would be good, too!

  
 

So cheesy and delicious, and my whole family loves it!  I use mild taco seasoning and salsa because I make it for my girls, but you can use anything that you like!
