Make a Cookie Cake With Me!

I always celebrate big moments with my girls by making them a cookie cake. This is kind of a family tradition that I have started with them, they absolutely love it, and it makes them feel so special.

I made one when Ashley (9) had her art featured in the district art show, I made one when Allie (12) had her fifth grade graduation, and now I am making one for both of them because they have both been selected for their academic UIL teams at their schools.

Everyone loves a cookie cake, it is easier to make than a regular cake, and this recipe is super simple! I will show you how I make the cookie, frosting, and how I decorate it. I am using this pan from Wilton, but you can also use a square pan, or a cookie sheet if it is on the smaller side.

I also want to say that in no way am I a professional at this, but you know what? It’s the thought that counts, and my sweet girls will love it. I love to do things like this for them.

Let’s get started!

What you need:

  • 1/2 cup melted butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups flour
  • 1 cup chocolate chips
  • baking spray
  • cookie pan

First up, preheat your oven to 350 degrees, and spray your pan with nonstick spray.

Melt your butter, add it to a bowl with your sugars, and mix. (Just use a spoon- no electric mixer needed!)

Next, add in your egg and vanilla, and give it a good stir.

Add your baking powder, baking soda, and salt.

Next, add all of your flour, and mix until it forms a soft dough.

Last step, add in your chocolate chips.

Plop your dough out onto your greased pan, and spread it out until the bottom of the pan is covered.

Bake for about 14-16 minutes.

While that is baking, lets make our frosting. We are just making a basic but delicious buttercream!

What you need:

  • 1 stick of unsalted, softened butter
  • 1 tsp vanilla extract
  • 4 tbsp milk
  • 2 1/2 cups powdered sugar

Ok, we are going to have to get out our mixer for this.

Whip your butter with your vanilla and only 3 tbsp of milk until it is nice and smooth.

Add in your powdered sugar, and your last tbsp of milk IF NEEDED. Sometimes it is not as creamy, so you gotta add that last one, but sometimes it is fine.

I am planning on making the decorations two different colors, so it is time to dye the frosting.

I evenly separated the frosting into two bowls, because I am using roughly the same amount of each color.

I am using Wilton’s gel coloring in pink and teal, because those are my girls’ favorite colors.

Voila!

I am going to put them into piping bags, and I am using a coupler for the pink, since I plan on using two tips. I am using an open star tip #32 for both, and then a tip #5 for the pink.

I recommend placing your bag into a cup, it makes it easier to scoop the icing in.

Okay, it is time to decorate!

I used the open star tips and alternated colors to make the border. Apply pressure, and then release and pull up when you get your desired little star.

I used the pink with the open star tip to write their names, and then the teal to make the star and the little flowers (they’re supposed to be flowers, haha)

I then changed the tip on the pink to the #5 writing tip and wrote UIL on there.

I think it came out pretty good, and I know the girls will be so happy when they see it!

The cookie comes out perfect every time, soft and chewy, but a little bit crisp on the edges. It is so good, and you could make this for any occasion, it is not just for kids!
